COE – A JOURNEY THROUGH THE WORLD OF FINE COFFEE

As you may well know, the “Cup of Excellence” (COE) is the most prestigious coffee evaluation competition held in various coffee-producing countries around the world and was created to recognize and reward the highest quality and most delicious coffees produced by farmers in the respective countries. Coffees are judged on a variety of criteria, including aroma, flavor, sweetness, acidity, body, and balance.

After cupping, the coffees that receive the highest scores are awarded the “Cup of Excellence” title and receive special awards. This helps both the farmers, who receive recognition and reward for their work, and us, specialty coffee connoisseurs, who have the pleasure of trying a variety of different flavors in just one cup.

Specialty Coffee Brazilia #2 – COE 2023 WINNER

Introducing our new coffee Brazilia #2 COE 2023, which ranks among the winners of the Cup of Excellence and was awarded by the tasting jury with a total of 89.88 points out of 100, making it one of the highest-rated specialty coffees.

It is grown in the coffee farm “Ecoagrícola Café” which is located in the Chapada de Minas district in the southeastern part of the state of Minas Gerais in Brazil. This area is known for its favorable climatic conditions and suitable grounds for growing coffee, resulting in high-quality coffee with a full body and rich aroma. It is grown at an altitude of 1100m. You may have noticed that high altitude has a significant effect on coffee cultivation and although at higher altitudes it can be more difficult and demanding, the result is often coffee with a more pronounced and quality taste, which is valuable for producers and connoisseurs of special coffee.

Here are some interesting facts about why high altitude matters a lot:

  1. Slower coffee harvest: At higher altitudes, temperatures are often lower, which speeds up the ripening process of coffee tree fruit. This gives the coffee more time to develop its aromas and flavors, resulting in a more complex and rich coffee.
  2. Better acidity: In higher regions, coffees tend to have higher acidity, which can give the coffee a brighter and fresher taste and thus make its notes stand out.
  3. More stable temperatures: High altitudes often have more stable temperatures throughout the year, which also positively affects the quality of the coffee, ensuring the even and constant development of the coffee cherries.

It is worth sharing another interesting fact about coffee processing as well – experimental fermentation, the decision for which was made as a result of the farmers’ desire to protect their long-standing reputation for traditional flavor profiles and consistent quality, while at the same time leaving room for innovation, experimental processes and atypical tastes.

Thus, they can compete on the world market, be evaluated based on their inherent qualities, and satisfy the taste of every connoisseur of special coffee.
