About the coffee

The coffee from Fatima Farm – La Cruz is specially selected and produced at an altitude of 1260 meters in the mesophilic forest of Coatepec, Veracruz. The farm is known for its naturally processed coffee beans, which are grown under the shade of more than 15 species of fruit trees, providing an ideal ecosystem for cultivation. Coffee varieties include Typica, Geisha, Garnica and Marseillaise, making it extremely diverse and unique.

 

Why did we choose it?

We chose this coffee for its high quality, certified with 87.17 points by Cup of Excellence. It is the result of careful hand selection and innovative fermentation methods that highlight its complex flavour profiles. Furthermore, its production is sustainable and has a positive impact on the lives of over 85 families in the region.

Where does it come from:

The coffee comes from Fatima Family Farm, which is located at the foot of the mountains in Coatepec, Veracruz, Mexico. The farm has 15 hectares of land, including protected water sources, endemic plants and forest ferns that contribute to the coffee’s unique characteristics. They have won the most prestigious international specialty coffee competition, the Cup Of Excellence, several times, the most recent time being in 2021.

Best brew

The main variety used in this coffee is Tipica, which is known for its delicate taste characteristics. Combined with careful processing, this makes the coffee extremely balanced and flavourful.

About the variety and the process:

Finca Fátima coffee undergoes carbonic maceration, a method in which the coffee cherries are placed in closed carbon dioxide (CO₂) vessels, creating an anaerobic environment (without oxygen). This controlled fermentation develops unique fruit flavours. The cherries are then dried slowly on raised beds for 15-30 days. The winemaking-inspired technique gives the coffee a more complex and refined flavor profile.

The taste

The coffee offers a complex flavour profile in which notes of dark chocolate, black tea, citrus, plums, honey and red fruits can be detected. Balanced malic acidity (peach and white grape) adds freshness, while subtle notes of dried fruits and spices make it an unforgettable experience for the senses.
